I love this salad. I’ve been working on some new lunch recipes to cover us through the week. Roasted chicken breast, Chobani plain greek yogurt, pomegranate, walnuts and fresh tarragon. Um hell yes.
I’ve been sitting on this post for a few weeks so if you can’t find the pomegranate I have substituted grapes split in half or even quartered if you have the patience. Just a pop of sweet is what I like.
Print recipe: {Chobani chicken salad, pomegranate & tarragon}
I’ve been making yogurt lately from raw milk we get locally, but if I don’t have it on hand I’m happy to turn to Chobani yogurt. Really. Yes, contact from the company did motivate this post but I was happy to do it. And though I think healthy fats are totally good for us, I wanted to go with the plain yogurt to dress this salad and went with the 0% fat. I used one small container for the recipe.
Ideally you can start with some leftover roasted chicken breast from the night before. I’ll sometimes even roast two birds at a time if I really want to stock up for the week.
Ingredients:
- 2 cups/12 oz chicken breast, cubed
- 1 cup celery including leaves, chopped
- ¼ cup onion chopped fine
- ½ cup walnuts chopped
- ½ cup pomegranate seeds
- 2T fresh tarragon chopped
- ½ cup Chobani 0% natural greek yogurt
- 2T olive oil
- 1tsp apple cider vinegar
- ½ tsp salt
- ¼ tsp white pepper
I cube about 2 cups or 12oz chicken breast.Personally, I generally prefer cubing to shredding. And to be honest, I would never put chicken in a food processor unless you WANT something resembling tuna from a can.
Chop celery, onion, walnuts and a couple tablespoons of fresh tarragon
Then have some fun looking at videos on THE BEST way to cut a pomegranate and decide you’re just going to quarter the damn thing with a knife.
And take extra pics because they are just a gift from heaven and so photogenic
Now pull it all together with your yogurt, a little olive oil, maple syrup, cider vinegar and salt and pepper- it’s a one bowl mixer. And do your thing to make it your own- little more salt? pepper? vinegar or lemon juice? sweet?
And voila… Looks like my Grandma’s bowl? Because it is:)
I like to think Chobani has earned their leadership in the market for Greek yogurt through quality in their product – hormone free milk, non-GMO ingredients and by keeping with the tradition of production. As a matter of fact, I’m inspired to try making my own Greek yogurt.

That’s funny. Yes I was and it was very casual without exchange of $ or product. I like the brand so thought I’d try on promotion. Did I over do it? I’ve seen a lot of bloggers posting recipes and I think they wisely push their social media marketing. The person who contacted me was nice and he responded to a few questions I had promptly which I liked as well.
You’ll probably see it on the shelves soon enough!

I saw chobani yogurt in the US last year but didn’t get a chance to try it. I like their website and how the products look, and I would definitely give them a try if they ever decided to sell over here!

Your Grandma’s bowl is gorgeous! My hubby will love this. Chicken is the one meat I make for him. Now I will have a reason to roast a whole bird. Plus he needs his daily yogurt! This is a winner!

Great. If he’s the only one eating the bird – he’ll get to eat lots of yummy leftover salads! Chicken curry salad is always a winner too. Easy and just a little something different.

Me too. And I love taking pics of them. They are perfect for just that spurt of tart sweet… in so many things. And I could practically live on chicken salad. I’m all for cutting the mayo with yogurt but I’m also a serious mayo lover!

HA! i was trying to figure out what in the world chobani is, when i read the title of this post! a vegetable? artisanal cheese? anyway, now I get it. I usually cut mayo with either sour cream or plain yogurt when I make similar salads, so I can just tell how good this chicken salad is! Love your ingredients!

Good point- it’s not everywhere! At least not yet. Kiki from Germany also mentioned it’s not in Stuttgart. I do the same, as you probably do, with tuna too. I love mayo but the yogurt does lighten up the taste as well.

I’m really starting to like Chobani yoghurt, I only bought it for the first time a couple of weeks ago and it’s delicious! Love the idea of this salad too – creamy but not artery clogging with mayonnaise or the like! I actually have a pomegranate at home so I’ve pretty much got most of the ingredients you’ve included here (sans tarragon – I hardly cook with it, such an underrated herb). So… this might be on the cards for dinner! Thanks for the inspiration! x

I don’t often use tarragon myself. But I do really like it for chicken salad. Kind of minty but really just its own unique flavor. I honestly can’t think of anything else I’ve used it to season. Got any ideas?

I’m so happy for this recipe because I do not like mayo, which is commonly in chicken salad, and I’ve been looking for a good mayo-free version. Yay! 🙂
